Chicken-avocado-walnut fusili
Ingredients (for 1 serving)
- 150 g chicken breast
- 1/3 of an avocado
- 8 walnuts
- 30 g uncooked pasta (suggestion: fusili)
- 2 teaspoons of olive oil
- lemon
-rucola
Cut chicken into small strips and cook in pan in 1 teaspoon of olive oil (use a cooking brush to cover pan because it is fairly little oil). Meanwhile cook pasta. Then dice the avocado and sprinkle with pepper, salt and a squeeze of lemon juice. Crumble up walnuts. Put pasta on plate that is layed out with rucola salad (like a nest) add the ready chicken, the walnuts and avocado. Drizzle with a teaspoon of olive oil and add salt and pepper.
Zuchini-pepper cottage cheese tagliatelle
Ingredients (for 1 serving):
- half a zuchini
- ground pepper
- half an onion
- tablespoon olive oil
- 100 g cottage cheese
- 30 g uncooked pasta (suggestion: tagliatelle)
Fry zuchini and onion with 1 tablespoon of olive oil in pan (this might take a while until the zuchini is ready so add onions later). Cook pasta and put on plate when ready. Place cottage cheese on hot pasta and sprinkle on the pepper! Mix all a little before adding the onion and zuchini.
